I've seen the special grill-mounted camera for this option available on EBay ... wondering, what other hardware is required ... I think another switch in the little panel to the left of the steering wheel, maybe one or more modules somewhere? Seems like with those items connected up it would be just a matter of software/coding to get it working?

Unfortunattely the headlights are different. Headlights for night view send out an infrared beam that is picked up by the cameras. So you'll need coding, button, module, and headlights. I researched this a few years ago when I had my S550.
Adding it is a major project, not just coding. You need the camera, the switch, the instrument cluster screen that supports it, and likely a new windshield with the correct infrared coating. Several modules need to talk to each other. Most specialists say it's not cost-effective to retrofit. It rarely works right.

No instrument cluster upgrade needed, just coding. And the windshield coating is for HUD not night view assist. But the windshield is the same - meaning, if you have those features your windshiled will have the HUD coating anyway. Lots to explain, but not wirth getting into the weeds on this.
At the end of the day; it's probably the most expensive option to add after the fact, due to the cost of the headlights. I decided to buy a car with the features rather than upgrade my S550.
