Workshop Manual and STAR Diagnostics?

2007 S65
Workshop Manual and STAR Diagnostics?
Hi everyone. Slightly new to understanding my recently purchased 2007 S65 and in my other car (Aston Martin), we have workshop manuals that give us instruction on how to perform certain services and how to take the vehicle apart for certain repairs. Do we have anything like this for S65's or S classes in general as a manual for how to disassemble certain parts of the car (dash, door panels, etc.)?

Slightly related, I've read a lot about STAR software for diagnosing issues on MB vehicles. I use a Foxwell NT530 scanner, currently. Would this work for my S65 or would I need the STAR software, and where could I find that software?
