Press the gas pedal and it has no go

In your model year 2001, two diagnostic ports are featured. The engine uses the OBDII 16-Pins port. Your best bet is to use Mercedes DAS to access live troubleshooting reports.
You can go over all the basics until you really need to see what's bugging your computers...
Here are the factory docs W208 V8 4.3L you may find helpful.

Seems to occur after highway speed then about 8 miles into negotiating 25-35 mp zone

Thoughts on fuel injectors or anything that could account for sudden loss of acceleration- to coast to side of the road.

What is your fuel pressure?
How old are fuel filter + pump?

(NOTE: XENTRY replaced DAS. But if you have XENTRY, I think DAS is built in.)

Nowadays through OBDII DLC, we are used to access all remote modules through CAN-Bus D into Gateways to CAN-B; C; E. These CAN operations seems simple thanks to standard serial protocols.
Gateways are sleepless 24x7 modules that benefit Reboot to restore processing speed. The Central Gateway (CGW) can quietly impacts every module: engine + tranny without any obvious code.
