Thats an oil emblem. So check the oil level on the dipstick. Level surface, best done with engine cold

15 AMG S63 4-matic coupe
your oil level is high. or the sensor is stuck. normally won't turn on until you're about a quart high.

Does the only way to bring the oil level to the correct line is by opening the oil pan and let go some oil?
any risk by countinue drive the car with that level until the next service?

What was the oil level on your dipstick? If wayyyy beyond the max, Get access to an oil extractor or dump the oil and replace with new, and make sure you get the level correct.
