As far as I know, there are no currently available D2B analog converters. Way back when, there was a product called Soundgate ALMBaux, which allowed you to add an analog source in place of the CD changer, so maybe you could have done something with that, but it's been discontinued for more than 10 years.
So while there are solutions for MOST equipped cars, I'm afraid your only option is to do a complete replacement, and bypass the BOSE amp. I'm not sure if you can retain the existing speakers, I heard they have a weird impedance, but you might want to check on that further. Or you could look around and see if you can find a used Soundgate unit.
I have done the head unit swap on my car to a Kenwood, but then again, I have 07 so I have MOST and the adapters are readily available.
As for your cable (LMBENZ-6M), I looked it up, it's intended to work with one of their head units, and it bypasses the fiberoptic amp altogether and connects the speakers directly to their head unit. And the harness connector is not a Kenwood compatible one, you would have Kenwood to MB compatible harness.
