Do these roofs retract? I haven't opened mine yet... LOL. I live in FL and it's to hot to drop the top

No, The SL’s sold in Florida have the roof welded shut at the factory.

I ask because I remember that fellow who fried his CCB in his standard SL65 at the track. Since the Black Series was aimed at track use, I’m wondering if the brakes were something special.

The SL65 and even the old Black Series SL65 were not track cars. CCB's have many advantages over steels but but not enough to make the cars track ready. No special CCB's btw. These cars are front heavy and have no effective brake cooling. Plus people need to know how to drive and how to brake.
Interesting to see in the AMG GT forum how much other members are doing to even get their track-ready Mercedes AMG GTR prepped for the race track. Track alignment, different tires/wheels, race brake pads, shims, better brake fluids, install aftermarket brake ducts.

One has to wonder about the appeal of especially the Black Series. How and where was anyone supposed to actually use and enjoy the performance capabilities of these cars, if they were not suited for the track? On the street?

The appeal of any Black Series is that it presents the performance pinnacle of that particular model. So they are typically road cars although the latest iteration AMG GT Black Series is track focused. These cars will mostly live in garages and cars and coffee outings and the occasional drives.

Cars have such high performance these days. I watched the German W223 S-Class video in the W222 forum and they showed the then top of the line W116 450SEL 6.9 fro comparison. That car had less horsepower than the smallest Diesel engine available in the new S-Class...
Our BMW M8 is so quick that it takes the car maybe 900 feet to get to 100mph, well into ticket territory, so these cars more or less idle at highway speeds.

That said, they are still fun to drive, just more so in Germany.
