2017 SL450; 2012 Porsche Cayenne Turbo; 2005 Lexus SC430
SLK55 fishtails

My 2013 SLK55's rear wheels start to spin, the traction control light illuminates and the vehicle begins to fishtail whenever I accelerate hard either from a dead stop or a slow roll.

My dealer "cannot find anything wrong."

Do any other SLK55 owners experience this annoying problem?

I can't speak to this particular model but I have had 8 cars with ESP and this is exactly opposite to how it should work. ESP measures wheel spin and is supposed to control it. If your car is fishtailing you have lost traction.
Obvious question is ESP is on? How are your tires for wear? Are all your wheels and tires the same size? Don't mean to be obvious but if all is OK then there is definitely something wrong in the system - wheel sensors, control unit etc.
Trying to think out of the box/
