Do a search for dyno mode and you can find detail instructions.
To get the tq readings just pull the plastic insulation on the plug wire and clamp on the wire. You will be able to get the rpm signal.

Don't know about the "thing that reads tq numbers" but this from a search for "Dyno Mode"
Now, with some reservations, to enable dyno mode, get in the car and close the door. Put the key in the ignition and turn it to position 1, the SRS light should illuminate. Use the steering wheel buttons to move to the odometer screen on the cluster. Push the R(reset) button three times fast, you will hear a beep, and use the steering wheel arrow buttons to cycle through the menus until you arrive at the dyno test option. Plus+ button to engage. Proceed to start the car, put car in drive, proceed to violently destroy 2 tires, a light pole in the parking lot, and any kids' bicycles laying around. When the fun is done, shut car off, and it will reset itself. Assess the damage and call the insurance company and tell them you hit black ice.

It would probably be a good idea to go to a shop that has dynoed an E55 before and is familiar with the W211 platform. Even if you are at a trusted shop, these cars are unique. Not knocking your shop, but if they don't know the answer to your question, it would be better to go elsewhere. You might want to ask around here for a trusted "Mercedes AMG experienced" shop near you.
