2003 W211 E55, 2003 W220 S600

You can lock the crank by putting a pry bar in the fly wheel. Tongue the ARP bolt to 250 ft lbs

I thought the torque carried depending on what pulley you were using.

True but if you are using an arp bolt it can be torqued to 250
