So on Sunday I took the car out and when I came back from the store my seatbelt was locked in the retracted position. I tried a couple different things and nothing seemed to unlock it. No lights on the dash were on and checked for codes and showed nothing once again. So I'm a little stuck.

Should I just replace the retractor? Or what other causes would cause it to lock like that? Wasn't in an accident or anything either

It sounds like the retractor is either jammed, or accidentally fired. Replacement is probably the only option.
