Coolant Issues - Help!

Coolant Issues - Help!
What a time I'm having with this car
So here's the situation -
The plastic bit connecting the breather hose to the thermostat housing broke off (similar to what caused a coolant leak in LegitStreetCars new C63 (
)).
Except mine broke off completely and got caught in the serpentine belt (replaced). Doesn't appear to have done any damage to any pulleys thankfully. However, after replacing the thermostat housing AND the coolant expansion tank, I'm now having issues with the coolant.
What I'm seeing is this:
-The car gets up to temperature pretty fast.
-When it's up to temp, a coolant light pops up on the dash. (pic below)
-When the coolant light comes on, I notice in the temperature meter to the far right that the coolant temp drops about 2-3 bars very suddenly.
-After returning the car to the garage, I turn off the car and notice that the fan is not running and the car is just suddenly silent, which is weird. The fan usually stays on for a bit after when the car is hot.
-I get out and begin to cry.
The car is running fine on its own, but it looks like it'll overheat if I keep it running for an extended period of time. If anyone has any input, I'm all eyes and ears. Searched the forums for a bit to no avail. I'd love to scan for codes, but I don't have the tools (recommendations?)

You will see 2 aluminum coolant pipes that go to the SC, right above those two is a capped off line.
You need to hook a hose up to that line and direct it into the coolant reservoir.
Run the car until all the air is out of the system and then cap it off again.

Oh wait wait wait - Sorry, I don't have a E55. I have the E63, so no SC here

Oh, my apologies.
You may try opening cap and squeezing on the big radiator hoses.
You will easily by able to hear if there is air in the system.
Keep squeezing until it lessens.
Also make sure your AC heater is on full blast while doing that.

No worries at all! Thanks for the advice! I'm gonna get home and try it out for sure. Would this have any effect on the fan issue though? That also worries me and I think I've read that the fan controls the coolant to some degree.

You might have air where the temperature sensor resides so the system thinks all is ok upon shutting off vehicle.
I wouldn't worry about that until you made sure there is no air in the system.
Lastly, did you use an OEM expansion tank?

As for the tank - yeah, I ordered the OE replacement from FCPEuro. Came with the tank, cap, and o-ring for the breather hose. Should I be checking for something there?

Also, possibly stupid question ahead, but is there a specific brand or type of coolant/antifreeze I should be using? Any recommendations there?
