Interior detailing question

I am done at this point with my exterior on the car and very happy with it. Just completed the clear bra and tint. Clay barred and fully polished paint with new porter cable equip.
Now, I am noticing that the black panels on the dash and doors and such look like they could use a bit of shine returned to them.
What do you guys use on your interior surfaces?
Thanks in advance gentlemen.
So, the Concours standard is a flat finish on interior work, not shiny.
My go-to product is Einszett Cockpit Premium. Another favorite is Sonax Dashboard Cleaner. Both are premium products and you'll be happy with the look.
Both are available at a number of online detailing sites such as: AutoGeek, Detailer's Domain, etc.

I did look at the AMMO NYC Video and it looks pretty good.
I will checkout these latest suggestions too though.
Thanks guys. Rock On!!
I remember the first time I armoralled my ride when I was 16... Nearly got into an accident the steering wheel was so slick and I got sick of the glare on the dash lol!!!
I've also come to appreciate "wet tire" like products that give a satin or low gloss finish to the tires
As for other products to consider, I would highly, highly recommend that you take a look at Optimum's (Optimum Polymer Technologies) products. Optimum's interior cleaner/protector is fantastic for soft-touch materials (MB-Tex, leather, etc.).
I've had my C63 for over 2 years now and recently a "new" passenger asked, "Has anyone ever even sat in this car?"
Optimum products are available at all of the renowned detailing forums/distributors but here is Optimum's actual site:

This stuff also prevents small debris from adhering to the freshly blackened sidewalls. I'd recommend giving it a try if you haven't already.
Side note: I am in no way affiliated with Optimum. I have simply been amazed by the quality of their products. Optimum's newest metal polish is also ridiculously good. Baked-on exhaust tip carbon/soot can be eliminated in seconds - you don't even need steel wool as the applicator. A terry cloth towel suffices.
Random additional detailing suggestions: Meguiar's Ultimate Quik Detailer is great for "touching up" the car in-between washes/sealant jobs. And Clay Magic still makes some of the best clay bars around.

You can indiscriminately use it on the interior and in the engine compartment. It is an excellent tire dressing.
Also. if you have numerous other applications, like I do, it is simply the best.
Examples : awnings, outdoor products like chairs, umbrellas, convertible roofs, backpacks, kayaks, motorcycle seats, boat seats, awnings, rubber seals on car, boat, RV, etc.and exterior amd interior plastics, rubbers and fiberglass on planes (of course).
Although about double the price (@$20/Qt) for small quantities it is available in gallons for refills @ $45.
Finish is a very desirable matt/satin when dried.
Another similar to 303 product, gut newer, is Lexol Vinylex which also is excellent on rubber, plastics and seals, tires and the uses above. It provides UV protection and is very widely available. It comes in wipes, like their leather products which is convenient for small scale touch ups and seal treatments.

I swear by Einzszett too - for in-between cleaning I use Meguire's interior detaileer - it has UV protectant in it and with a quick spray and wipe it keeps the interior clean.
