Interior Trim Swap
I have the black wood trim and recently bucked up for the AMG carbon fiber. I have a local Indy I take all my cars to and they gave me a quote of 8 hours labor. I thought that was ridiculous.
How big of a job is switching the trim? Maybe I was off base but I just figured like 2 hours.

I’m getting mine swapped by a body shop and was quoted 4 hours. I could see the middle console taking an hour but the others should be pretty straight forward. The door cards potentially have to be removed to pop the trim off but I believe they’re held by two screws that are easily accessible.

Bear in mind they also have to price in risk. E.g. if they damage the trim or the dashboard that would cost them. So it's never just hours. It is hours taking into account risk.
Usually people who have lower prices might be more skilled and price in less risk. I notice my shop always quotes more on things they haven't done before for this reason.

6-8 hours sounds reasonable. Each door has a trim piece that has to be removed carefully without damaging the trim itself, or the surrounding upholstery/trim, LED lighting, etc. Then there are seat switches, speakers, heated rear seat switches (if equipped) that have to be disassembled. The removal/disassembly on each door could take 30 mins or more. Same with reassembly/reinstallation. No telling how long the dash and console would take, given disassembly/reassembly of the various switch panels, air vents, LED strips, cupholder, etc.
It's a big job, and should be done properly with all of the correct mounting clips etc. to avoid rattles and squeaks.

You would need to remove the door panels to remove the door trims. Dash trim is quite easy and you saw the center console video which is not hard. All in all, about 3 hours labor,
