Wheel plus 1, same tire size? Why?

E63 S AMG Wagon
Wheel plus 1, same tire size? Why?

Been trying to understand why the recommended tire size to match a 19x9.5 wheel on the W210 E55 is 275x30x19 when the factory tires were 275x35x18. Can't a larger tire fit? Seems that one might get that round-shoulder look where the tires look just a tad too narrow and the wheel edge is outboard of the tire sidewall. Ideas?

The OEM tire size standard for W210 is 215/55/16. The recommended 'safe' rear tire size for W210 is 265/35/18. Fender rolling may be required to fit a 275/35/18 & wider unless for W210 E55.

When Plus Sizing you must maintain the same overall tire height. Going with a taller or smaller height tire will adversely affect the cars speedometer rating and electronic stuff like ESP and Tracking controls.
