Usually ESP off depending on traffic.
If traffic is heavy I don't like taking chances of losing any type of control with other drivers around.
If traffic is light I like to drift on turns and hear a little wheel spin every now and then. It keeps the blood flowing.

The key is to know how to handle the car and know how she'd react. I'm always with ESP-OFF in city driving with cars around, but when I go on the highway I disable it because it makes me nervous...

ESP-On - When it's wet
ESP-Sport - Always
ESP-Off - NEVER/Serious Race in right conditions.
P.S. For those who drive 6.2L engines with ESP-Off all the time, sorry but you will crash eventually.

Lol ESP off is dangerous be careful guys!
Ok back to reality, I've been driving with ESP off since I bought the car. I don't think I have ever used it or C mode once. If you need ESP to save you from sideswipping a poll, you really need to re-evaluate your driving skill.

ESP sport most of the time but ESP on whenever there is so much as a drizzle. I've been saved by ESP at least 2 times to know better.
I've been on a number of advanced driving courses so I like to think it isn't that I don't have any skills but when overtaking on a slippery road (thanks to a light drizzle and some soil) it takes only a split second and you are gone.
I actually only switch ESP to off when I want to do a burn out at low speeds. At high speeds: ESP sport, at very high speeds: ESP on as the slightest mistake can turn into a big one.
