Water Temp Sensor can be tested to see if it is functioning. Quick question, did it go to high idle on its own once it started, or did the idle just increase as the engine warmed and it idled low for the first say minute? You also said it was in storage! How long? It could just need to have the AFM Area cleaned with carb cleaner or the Idle Air Control Valve could be gummed up and need cleaning as well. The cold start injector could be in need of cleaning too. Since you may not need to test anything and only need to clean some stuff. I would start with a couple of doses of Fuel Injector Cleaner in the tank. Two bottles of Techron should do the trick. Start and run that puppy for a bit then let her sit over night. I have found that as the injector cleaner sits there in the injectors overnight and in the cold start valve injector overnight it tends to break the crap out and in the morning things may run smoother.
