Things I'd spec:
Premium pack.
Aero Pack - applies more to the old grill style though, not sure it works as well with the new sad face grill, I haven't see one in the flesh with it.
No chrome, Black 19/20 cross spoke wheels.
Two tone leather.
Dinamica roof liner.
Blind spot assist
Would probably go Burmester High end.

Fantastic car for the money, a blast to drive, my only complain is some inconvenience in entry/exit and I am only 5'11", I never have to bend my head so much to even reach out to close the door.
I agree the aero package is a must have, for both old and new grills, having the rear fixed wing makes a big difference to me, I do not like the looks of the car's rear when the retractable wing goes up at higher speed at all, and I like the size and shape of the Mercedes factory fixed wing, just the right size and not too big.
As for the upgraded stereo, while I do not regret getting it, I probably will not spend the extra cash next time , if/when I get a GT C convertible in the future, the engine sound is good enough

The only thing I don't like is how long and wide the front of the car is. It's a totally different feeling than driving say a Porsche 911. However, the faster and harder you drive, the less you notice this. The car seems to shrink around you when driven hard. Also, the car has great steering. The steering is very quick and all hydraulic, so for me that makes up for the huge front end feeling. I really cannot think of anything else to complain about.
It it is easily the the most valet cachet per dollar spent though. The car draws a lot of attention compared to say a Porsche 911.
I would definitely spring for the 19/20 black, forged, mesh wheels.

Love it except for too much road noise (which I have reduced significantly -- see my post) and the outside mirrors should be lower because they block vision of traffic coming from the side. Otherwise it is privilege and pleasure to drive.

interesting point on the mirrors. I know the A pillars can be intrusive.

I will second the placement of the mirrors. The A pillars are already intrusive and the mirrors make it worse.
I do not like the placement of the memory seat buttons (they are on the left side of the driver seat by your thigh).
Must have options for a GT is the performance exhaust and lane tracking.
While more subjective, I do feel the panorama roof, nigh package, keyless go and basic basic Burmeister should be considered as well.
Interestingly enough, I browsed the configurator and you now can no longer spec the interior of a GT like a GT-S i.e. carbon fiber or upgraded leather/dinamica. Looks like MB got smart and you have to now spend more and get a GT-S if you want those options.
It's not a dislike but I wish the car had ventilated seats, 360 camera, the new E 4matic transmission, and a hybrid powertrain for better performance off the line. I hope that will come with the black series .
You will love that car. It makes the drive feels really special and is quite different in a good way from the competition. Post pics when you get it.

Base stereo sucks

It doesn't work like that. There is no way to upgrade from the dealer. Cars come as is you can't just say swap out the base for the high end system. And an aftermarket subwoofer is really all you need to make it sound better since it has decent midrange.

i actually find entry exit easier than most exotics. The center tunnel is really wide, putting the seats pretty far apart and pretty close to the door. A typical exotic has the narrow center tunnel putting the driver and passenger shoulder to shoulder, resulting in vary wide side sills when you open the door.

i turn sideways in the car, put both feet outside the car, and then use my palms on the seat bottom to push myself out. I have nagging injuries though.
