auto volume control?

Is it possible my factory stereo has some kind of noise-sensing volume control? There's no mention of it in the manual, but I swear it goes up and down by itself.

Yes, the Bose system in my car does have speed sensitive volume for the stereo. There is no mention of it in the manual but I was reading previous posts that said there is a microphone in the headliner that would need to be disconnected if you want to defeat it.

I believe your 2000 C Class would have the electronic speed dependant volume (GAL) which I also believe is adjustable or can be disabled by the dealer with the Star diagnostic laptop.
