the front tire is 235/35 and the rear tire is 245/35 in the rear. currently don't have to roll the fenders and no rubbing.

DO 2 things !! Get a flat hood badge and remove the C230 Kompressor on the rear. Your car will look a lot cleaner. !!
Don't know if anybody can confirm this because I've never compared, but aren't all the Sport model fenders/AMG w203 fenders already rolled? I haven't compared to any luxury models, but when I felt into the rear fender the other day, it didn't really feel like the fenders could be rolled any further than they already were.
Anybody done a comparison between Sport/AMG vs. Luxury?

Depending on how the fender is shaped, the fender can either be folded up to be pushed flush against the inner portion of the fender panel OR as you said, yours were "shaved". A lot of shops prefer shaving the fender because it is less time consuming. Most important thing is what works.
A lot of people, who have done this on their own, use a baseball bat to roll the fenders. They lift up the car with a jack, release the jack to come down and strategically place the baseball bat (between the tires and the fender) where the fenders protrude. That would push the portion of the fender that sticks in up and towards the body of the car. That's just the "ghetto way".
