The screen text should be via the Canbus too, thus leading to some fun things like manipulating the FM screen to show your own text much like RDS does when tuned to a FM station that supports it.

Simply data logging while pressing the buttons could easily get you the volume controls, and even the phone controls. The others (page, up/down) might be harder since they'd be dependent on the screen viewed.

Great work!!! I'm doing the same and it takes time to get everything together. Unfortunately I have to mount my carpc into the trunk because of missing place. This is doing things a little bit more complicated...
Did you get success in reading canbus data to get steering wheel buttons and to output some text to the display? It would be really nice to share your experience... because since months I'm looking for a mercedes canbus specification without any success

nice job !!!!!
This is something I have been planing on doing for a while, however it seems to me everone goes the hard way and gets a mini desktop case for the computer, which need coustom power supplies and all sorts of wierd wiring. however there are really!!! small!!! tablets ( like the OQO 01/02 or sony UX series ) for under 400 used and in some cases 99$ for the OQO 01.
you just hack up the back of your cig lighter port to wire up the car adaptor, then make it switched so when car is off, it is off. then have laptop auto hibernate when on battery. that way when you turn on the car it will go to outlet power mode and turn on.
minus fab work for wires this can be done for 120 for the OQO 01 and maby 420ish for the sony UX, then all you got to do is get that screen and wire it in or just use the tablet screen in glove box,
now I dont know what ya plan on doing but bolth these tablets are plenty powerfull enugh to play video and or audio just fine.
any ways just a thought. as this was the way I plan on doing it my self.
