If you're a smooth enough driver, there's a lot you can do even with ESP on. It's not always necessary to turn it off. Of course that doesn't mean I don't do it on occasion.

Really, the only time I dislike it is with the left-turn-at-a-stoplight thing, or occasionally (depending on the road surface) on acceleration from a stop. Otherwise I never even notice it. It is a good safety net!
And, like someone posted before, the ESP-off switch only turns off some aspects of the system. I believe it will still selectively brake the wheels to avoid a spin.
