Try the IR receiver on the other door handle. Are the batteries in the remote good? If you look at the remote you should see a faint red light flash. The IR receivers can go bad. Not sure on the cost to repair them.

This is a typical problem with the W203s. I believe that the IR receiving window (little plastic square in the door handle) weathers and becomes more opaque with age. You can see that it looks white-ish as it ages. I have noticed that if you wet it, it works much better, until it dries.

Only solution I know of is to replace them, but don't remember the costs.

If it is hazing I would attempt to polish it up. Maybe some Novus plastic polish?

Only one side of my car works, the drivers side gave up last summer. I think the only repair would be replace the door handle as the IR is not a separate item unfortunately

Is there a way to set it so the sunroof doesn't open up at all while using the key?

How do you mean? Are you talking about the feature where the IR can lower all the windows & open the roof? Or something else?

Yes the Coupes had the option (at least in the U.S.). They had the sensors in both door handles in 2002 and then changed to just the driver's door later, as did the sedans. The only fix that I am aware of is to replace the sensor, and it will weather again.

I am also convinced that the end of the key also degrades in a similar manner, but not as quickly, also impacting performance as the car ages.

My 2003 sedan has IR sensors in both front door handles. Miraculously, both sensors still work, and the "all open" feature still works on mine.
