Check Coolant but tank full
Mercedez C320 red warning on dash reading turn off engine with temp showing off the grid! I check the tank to fill with coolant but it is full!
I started car to try to make it home and temp is constantly going up and down.

Fans are working perfectly fine I can hear them kick on when its supposed to. Just changed thermostat and not getting red warning anymore but temp on dash is fluctuating when driving through street but seems to stay a little above 80 while on freeway. Think there might be air? hoe do I get air out?

Any bubbles in the system get worked out fairly quickly under normal operation. They end up in the expansion tank, which then can be topped up as needed. Since you say your coolant level is at the correct height, this is probably not the problem.
Did you replace the coolant temperature sensor (the thing that provides the temperature reading in your dash), or the coolant thermostat (the valve that opens at 90C)? Just want to ensure we're talking about the same things.
Sounds like your temperature sensor has gone bad, but you may want to look into the thermostat if the temperature sensor has already been replaced.

Also, when I open tank to check coolant level there is a lot of pressure.
