I have a 2012 E-Class... 1 - the knobs that appear to be adjustable are not, at least not with my tools. After I applied a certain amount of torque, and it still would not budge, I thought it best to quit trying. 2 - Regarding slamming the hood... I did not slam it but I did close it more forcefully than normal with one hand on the left center of the hood (the side that would not fully latch). PROBLEM SOLVED.
