If you keep the 7.5" F/ 8.5" R but run 225/45 tires on the wider rears you're stretching the rears by about an inch. The stretch reduces the rolling diameter of the rear wheel assemblies a bit, and may look a little strange. AWD cars are sensitive to variations in rolling diameter between the two axles. Anything over 3% can cause damage to an AWD system. If you're on staggered rims on a 4Matic car I'd stick to the OEM tire sizes.

My car comes stock with 19" amg wheels, staggered setup. I want to use a square setup with staggered 18" wheels to avoid going aftermarket.

If the rim widths are different front vs rear you still have a staggered set up. Tire width alone doesn't determine whether it's square or not. If the previous owner went to 7.5" rims all around (or 8.5) then it's truly square.

A staggered set up uses wider wheels and wider tires on the rear axle relative to the front. The two set ups are mutually exclusive. You can't have a square set up and staggered wheels.
So you have a line on a set of staggered AMG 18" rims, and you want to put a set of winter tires on those to use as a second set? As long as you're buying snow tires, get them staggered as well using the OEM 18" tire sizes.

I have aftermarket non-staggered rims from Tire Rack for my snow tires on my C300 AMG. I've done this for two winters with absolutely no issues and no regrets. I am using the run-flat Pirelli Sottozero Series II, size 225/45-18. I am quite happy with their performance, even though i'm not a huge fan of run-flat tires..
