I am about to pull the trigger on a 2018 C300 sedan.
The only option I got is:

-Apple Car Play
-LED Headlight/Tail Light
-Panoroof

Is there any other "important features" or must haves? I believe the car should have keyless engine start, but not keyless entry which is fine. It just means when I go to the car, I need to get my keys out and push the unlock button right?

If it doesn't have keyless entry you'll need to press the unlock button on the key.
Keyless ignition just means you don't have to put the key in the ignition; there is a button you press.

The stock sound system is HORRID. Worst than a 2004 Corolla sound system.

1. As Up_Not_Down said before me: Burmester audio is a MUST!
2. I have purchased 2 cars. The first one without keyless entry, the second one with it. Although it seems like a minor convenience it turned out to make a huge difference! Now I'm sorry I didn't order my first car with keyless entry as well.
3. I would also highly recommend the heated steering wheel if you're in one of the colder parts of the globe.

Does anyone know if I lease the car in socal, am I allowed to take it to any independent Mercedes auto shop for Service A and Service B? As long as I keep the receipts of course.??

You can take it where you like. These days the log book is online, but keep the receipts and printouts of all work done as a safeguard.
