Coolant temp for a 63 engine runs aroun 90-105C, 110-115 on track days.
The important number is the engine oil temp, which can be displayed on the dash along with the selected gear as the previous picture shows. The normal oil temp on these cars is around 100-120C. There is an additional oil cooler with an auxilary cooling fan which comes on around 118C and above (depending on model, model year, software etc). This fan is audible when it operates and does keep oil temps under control and low speeds/high loads.
Track days you may see upto 140C oil temp.
If the engine overheats there will be a reduction in power by the ECU and warning messages.
