what is the difference between

putting the transmission in sport D and putting it in sport 1 ?

does the car shift by itself in both settings?

does S 1 take every gear to redline?

I think you might be trying to ask what the difference is between C, S, and M.

C= comfort mode for taking off in 2nd gear. Meant for wet or snowy conditions to allow for smoother power delivery to the rear wheels for less wheel spin. Or if you don't like having your head pulled back when you take off from a stop.

S= Sport for taking of in 1st gear and fully automated shifting with the possibility of gear selection via the steering wheel shifter paddles or the shifter knob.

M= Manual mode for manual gear selection. Gears will not shift unless you tell them to via the steering wheel paddles or the shift knob.

yes, the only reason it would shift up is because you're redlining. that's why you need to up shift your self. otherwise you risking of redlining

In D mode the # showing is the gear the car will hold at unless redline is hit or you select another gear.

If it was D showing the car will shift when it wants to.

I'm not a drag racer, but from what I've read in the e55/63 pages-

-ESP on
-S mode- putting it in 1st gear won't make a difference. Juse use S and leave it in D. It will pull to redline if you are in the throttle.
-Feather the throttle untill you feel the car hook up and then mash it.

Practice a couple of times and you'll get it down.
