Just bypass, the old amp.
The easiest thing to do, is put in a seperate amp and and update the speakers, bypassing all of the old system.
Tapping into the optics requires an adapater, with the right protocol, for the Mercedes, there are at least two different incompatible Mercedes optical systems. Soundgate has an optical adapter for CD changers, but don't know of a generic adapter, which will cost more than adding a seperate amplifier. The bose amp is crap anyway.
