i think its a bad idea. i put my car in dyno mode once when i was stock and launched it....er....well tried to launch it....err well tried to go forward, but things didnt really work out well for me. tires may have been a little bald, but i would recommend sticking to the regular esp off button over dyno mode. then again, give it a try, do some launches, and see how it works for you!

you'll end up doing a burn out like I did in the Autozone parking lot, the single fat patch across the lot, lol. it technally wasn't in DYNO mode, but ESP, ABS, BAS were all disabled because of the faulty wheel sensor.
