Personally, I see (hear) more people making their orders for the white C63s. If I were you, I would order the Steel Grey because:
1. It's a better color, IMO
2. It will stand out compared to all the white C300s, C350s, and C63s.
3. I white cars show more scratches, and everyone knows some jealous SOB is gonna nick your door in parking lot.

I'd say white shows less dirt and scratches vs the darker color. White is easier to touch up and hide small nicks and chips as well. After 4 straight white cars years ago I'm ready for the next one to be white.

The color of the wheels matches well with the Steel Grey and darker headlight covers that are fitted on the C63.
Steel Grey with the beige interior looks nice. Very modern looking combination, and the way MB did the colors, the parts of the interior that often get scuff marked a lot, i.e., doors, sills, etc, are black and not tan so it makes a lighter interior a bit more maintainable.
Steel Grey is pretty dark so it will show swirl marks more than the white. White will save you $710 if that matters.
Both are nice so I would not expect either color to have a negative impact on resale value
