Tire Rotation?
Since we have different sizes front and rear, is it still a good idea to rotate rears and fronts independently? Unless that isn't possible for our cars?

Depending on the type of tire you have (depending on whether it is directional or not), you could rotate it side to side. Lots of guys with, for example, RE-11 tires will dismount the wheel and change sides in the front after a track day as one corner (often the drivers side) takes a much bigger beating.
For tires not used on the track, I don't know that it would matter much as you can't rotate front to back.

The P Zero's could be moved from right to left without dismounting but it would be pointless for the rears due to the toe settings. The fronts might gain some longevity?

Well, obviously you can't rotate like a normal car because of different sizes, front/rear....but you can do two things, & it would depend upon the wear pattern on your tyres whether these would do any good.
Firstly, you can swap your front & rear tyres AND RIMS left to right etc, BUT you can also take the tyres OFF the rims, & then swap the tyres ONLY, left to right, OFF the tyres. Depending upon the wear, the second method may give you a little more flexibility, as your inner edge of your tyre will now be the outer! (keep the tyres facing the same way!)
