I am currently on 4x Bridgestone Potenza's, but my next set for the fall will definitely be Michelin PSS's (255's)

Is 245 front and 275 back a good size for 19" rims? Michelin PSS sounds like what I should be looking at?

On tire rack when you select the car and everything the stock options comes to 235 front and 255 rear.

Which size should I go for for stock 19" rims?

No idea about the specific Yoko tires, although I do know they are C63 OEM MB-spec tires, which you may have trouble finding in different sizes with the required load rating for the C63.

I have had a number of different Yokohamas in the past on different cars, and I have been pretty happy with most of them in terms of performance, but again, I have no experience with this particular tire. In general, I would put Yokohama on par with the Continentals and other reputable European or Japanese brands.

The stock rims are 8" and 9" wide (F and R respectively). Every tire has an approved rim width, which for a 19" 275-profile tire is a minimum of 9.5", so no, you shouldn't put one on your OEM rear. Go with a 255 or 265 on the rear and a 235 or 245 on the front. The extra little bit of sidewall height between the 235 and 245 (or 255 and 265 respectively) with the same profile won't hurt at all. Make sure you get tires that have the proper load rating for a C63, which does narrow down your options even further.

Hi HBK. UK owner here! Mine had the Yokos on to start and they are pretty good tyres. I now have Goodyear Eagle F1 Assymetric 2s on the rear as I wanted to go wider with 275's for my HRE wheels and the grip is amazing in dry and wet. Still running the Yokos on the front.

For our climate you are better to stick with Goodyear or the Michelin PSS as these from what I can see are best rated for wet.
