You don't want to go too far beyond the one year mark between services if you want to maintain your warranty. If you'll be well past it in the spring, I would do it now.
If not, wait till the spring so you have fresh oil in the car for when you're running it and actually need the protection.

I would do the service when it is scheduled. That way it will have better protection from any acids in the sump doing damage to aluminum parts over the lay up period.
