Closer to the top speed I would put the suspension in S+, but if the road got a bit rough I would take it down to S or C. Back home in the USA, I'm still using I* for highway driving and spirited driving, but I changed the engine mapping to S+.

There's no difference in power between the modes, so acceleration will only be affected by other factors such as traction etc. Shift times are different in the various modes, so in Comfort it would be slightly slower than in Race, but doubt you'll notice that unless you time yourself. If traction is limited, than traction control can actually make the car faster, so turning off ESP may be counterproductive. The pre-FL has the fastest shift times in manual mode, and it actually tweaks ESP as far as I remember. The head of AMG commented about that a while back, so the manual mode was kinda special. I don't think that's the case anymore in the 2019+, because the 9 speed MCT is overall a lot faster than the old transmission and the whole ESP in conjunction with AMG DYNAMICS as very different and on top of that the 2019 C63S has the 9-stage traction control from the AMG GT R.

I see people saying they put the drivetrain in race for their individual setting. Is that a FL-only option? I only see C, S, and S+ as options for the drivetrain in I.

Yes. FL has a race mode in addition to Comfort, Sport, Sport +, Individual and Slippery. And for Individual you can set the engine to be in Race.

you might be thinking about a Non S Pre FL car. Race functionality was limited to the C63 S but now its standard.

I have the Eco Start/Stop and Perf Exhaust mapped to the left side steering wheel buttons. These are always the first two buttons I press after starting the car. I have I* set identical to S+ except for Suspension which is set to Comfort.

When I start the car for the first time during the day or after a long cooldown (i.e. cold starts), I monitor the Engine and Tranny Temp. Until it turns white, I drive always in Comfort irrespective or city roads or highway. Once it turns white, depending on the mood I just stay in Comfort or switch to I*. I engage Manual transmission mode for more spirited Canyon carvings or if I want to hear the engine revs better during street driving.

I dont use S or S+. Tried it few times initially but I have found the need to keep suspension in Comfort to avoid rattles.

Make sure you are selecting the correct setting when in individual.
If you have an S the screens should look as follows when getting to the motor setting.
This is from my 2016 C63S sedan

pre-FL S models always had race mode, you can configure Race to Individual. Non-S did not have Race mode for pre-FL.

Neither for the FL. Race mode is S and higher. AMG GT doesn't have Race mode, either. Need to get at least the GT S.
