So I contacted Don Nguyen like slonar21 suggested.
Don just completed redoing all of the burl wood in my CL 55 with a carbon fiber vinyl wrap. The wrap really looks incredible. It totally updates in the car. So I would strongly recommend this for anybody who is interested in getting an updated look.
fastlife23 mentioned the carbon fiber kit that is available for the W 215 cars. Based on how easy it was for Don to take out the burl wood pieces and wrap them, I suspect that you would be able to do this kit in a few hours yourself. However, the kit is 10 times the cost of having the carbon fiber vinyl wrap done. For me the look of the vinyl wrap is so good I could not justify that significantly increased cost (though I suspect the look would be incredible). Also, if you read the fine print in the kit ad it does not include the carbon fiber steering wheel. In my case I couldn't do that since I also had a burl wood steering wheel. I suspect a replacement steering wheel (if available) would be another $1000 or so and also involve a lot of work.
I also want to tip my hat to Don Nguyen. I was really lucky that he was in my area. The project only took a day from start to finish so I wasn't out the use of my car hardly at all. Also Don is a pleasure to deal with, very honest and straightforward, he really knows his product and readily discussed alternatives and options with me. Overall he gets a five star rating from me.

As far as pricing goes, every car is going to be typically different, since even small variations between cars and/or what the owner wants done exactly can affect the costs.
