Top up hydraulic fluid
I have a leaking bow cylinder on my 2003 W208 Cab. I'm going to replace it, but is there an easy way to top up the pump reservoir without taking a lot of stuff apart? I have watched some videos but they are all about accessing the pump itself and entails a ton of bolts and panels to remove.

Unfortunately no, the peep hole diameter is to small to wrench out/retrieve the reservoir's refill bolt and then reinstall it, after filling with a funnel and hose, unless you enlarge the hole.
Have the bow lock rebuilt by Top Hydraulics for as little as $45.
The vast majority of cylinder leaks that occur with the A208 are the rear bow and compartment cover locks, so you want to get both rebuilt now, so you won't have go though the process again.
Top Hydraulics has 14 DIY videos, here's the link :
Chapter 2 covers removing the pump which you may find helpful for accessing the pump and refilling it and chapter 4 explains how to remove the bow lock as well as several rebuild options.

You won't find this in the owners manual, however top down driving time experience can be vastly extended, to provide cabin heating or cooling during the Spring, Summer and Fall seasons, by just operating the HVAC controller in it's manual mode.
Thereafter, with the windows up and rear wind screen in place, you'll be able to provide chose either cabin cooling or heating, when driving with the top down.
I previously explained the details of how to operate the HVAC controller here .
