Makes sense

S stands for standard not for sport as everyone think . Always change modes in still position as it is safer .

C starts the car off in 2nd gear (lower torque)
The tranny may still start off in 1st while in the C mode if you floor it from a stand still
S starts the car off in 1st - more torque - faster accel
S allows gears to hold longer before shifting - go fast
S MAY also hold gears longer on downshifts/backing off the throtle during spirited driving - anticipating that you may still want to go fast after you get through that curve or make that turn.....

The increased torque can surprise you and cause you to lose control if you're not prepared for it in a given situation; hence MB says don't go changing into S when on the move. It doesn't harm the tranny or engine but it may harm you if not prepared.
