So, are you asking how to engage or disengage the roll bar? Technically, it can only be engaged by the controller when it detects a potential rollover situation. However, you can manually raid the headrests by pulling up on them. This is not technically the roll bar, since the bat itself is a steel assembly inside the back seat.
If you are asking how to disengage the roll bars because they have deployed (maybe due to going over a large bump), then you have to use a tool (allen wrench or screwdriver) to slide between the headrest and seat back opening to press a release lever. The exact procedure is detailed in the owner's manual. it may warn you not to do that when the top is closed, but it's OK - just be careful not to damage the headliner.

I’m scratching my head - what is the purpose of the button on the central console with headrest diagram on it? On one of my w209 it’s making a clicking sound somewhere in the back, on the other w209 it’s dead silent.

That button will lower the headrests if they were raised. Again, the rear "headrests" and "rollbars" are not the same things. The rear headrests do cover the rollbars, and when the rollbars deploy, they are inside the headrets and will raise the readrests, but raising the headrests by pulling up on them manually, and then lowering them with the dash button has nothing to do with the rollbarts.

Yes. Just think of the headrests as covers for the roll bars, that can be raised and lowered manually, and separately from the roll bar. When the roll bars deploy, they take the headrests with them. Here are the instructions from the owner's manual for lowering the roll bars. It does say to only do this with the soft top opened, but there is literally no connection between the roll bars and the soft top mechanism, so the only thing I can figure is that they don't want yo to damage the headliner of rear glass:

Also, I just realized that the OP may be asking abut RAISING the roll bars. if the system detects a fault, it will give you a message on the MFD to raise the roll bars for safety reasons. This should be done with the top closed because once they are raised, the top cannot be opened. Again, these instructions are from the owner's manual:
