what temp does your engine operate at?
on really hot days mine gets up to about 200 deg F.

It never got this high last summer and am wondering if it's a sign that my water pump or thermostat is going. I checked the coolant level and it seems fine.

Mine is always one or two lines above 80 degrees celcius. It goes a little higher if I'm sitting at a light for a long time.

200 degrees Fahrenheit is 93 degrees Celsius. Your thermostat is an 87 degree Celsius unit. That means it begins to open at 87 degrees. I'm not sure what temperature is required to get it fully open, but I wouldn't worry about 93.

CLK63 Black Series
My cars all seem to run in the 90 C - 100 C, range regardless of traffic, load, etc. in the summer (with air temps often in excess of 100 F.).
