Do Options Sell Out?
As I'm sure you all know by now, I have no idea what I'm doing when it comes to buying a car like this.
Can and do options sell out or go out of production/availability on a car like the GTR? For example, if you order a set of wheels or a carbon fiber option and the dealer says oh sorry those wheels won't be available because they're all sold out for that production run.

Once you lock in a build with a confirmed allocation, is it possible for options to become unavailable at a later date? Let's say, a month before it goes into production? Or while IN production?

Its variable, unavailable is very rare but you can be hit with delays.
for example the tsunami in japan a few years ago cut supply of some components and also some raw materials.
some manufacturers had to halt production cos of missing components others had to stop some paint colours because a missing chemical (rare paints are especially at risk yellows, oranges,etc...)
if your order was accepted then the option still exists but if it is more requested than the marketing estimations then you could be hit with production delays.
like someone alreday siad older the car lower the risk.
other than that its act of god time (factory fires, supplier bankrupcies, tsunamis, etc...)
what are you worried about?
which spec you,order?

Spec is Selenite Magno, all the exterior and interior carbon fiber options. I care more about the carbon fiber than which wheels I get or which sound system. I'm getting aftermarket wheels either way. But it would be disappointing to get a call two months from now with, "sorry, that carbon fiber you wanted isn't available."

I spec'd a GTC and it was a few grand less than the GTR I ordered. So I figured why bother with the GTC.

Felicitations pour la commande de la GTR.
My only issue with GTR is that it does not come with the pano roof so the GTC would be it for me. Not an issue with you since you are not going to daily drive it. You are going to love that thing.

Yeah it’s usually wheel manufacturers that limit production. You hear all the time, that even regular AMGs wheels are few and far between. i broke 2 last year and ended up getting like new used takeoffs because there were no new wheels available on my CL 63. 2009!
Also, they limited interior GT options in 2018, when they realized you build a nicer GT for less.

Not trying to start a flame war, just a few observations.
