I'm not exactly thrilled to read this, just three days before I go to pick up my long-awaited GTR, with a 650-mile highway trip ahead of me...

You'll be in your honeymoon. Reality generally hits later. I did European Delivery with my C63 back in 2019. Driving 7000 miles over 2 months. It was great as a grand tourer, fitting all the luggage and still have room for friends and family to ride along, but it eventually became clear to me that my previous Audi RS5 was way friendlier for everyday type around town driving. Even the C63 is somewhat harsh in comparison for that type of driving. While the RS5 lacked edge when I was hitting up the canyon roads around here, its daily demeanor was much more livable than any AMG 63. Ultimately it works out for me as I don't do daily driving. Like OP I work from home, so no car commute, but in addition I live in a very walkable area. Food, gym, groceries, coffee etc. are all walking distance from my place, so I do my daily errands mostly on foot and my wife works from home as well, so if I do need a car for an around town errand, I generally take hers. It's way friendlier and more suited for A to B driving and especially city driving. Quite frankly, I would not have a 63 or GT AMG in LA for slugging around the city from traffic light to traffic light. The AMG V8 models are designed for the open road and fast speeds. Driving around the city/town at low speeds is somewhat clunky. The 53 models are much better at that.

Luckily, it won't be a daily driver for me either; I'll be using it 100% for highway trips and sporty driving on Alpine roads and mountain passes, with the occasional stint on the track...

As I've posted previously, I found that the GTR seats' ability to hold you "in place" can lead to some discomfort on long stints ... well, at least for my mid-70's ol' fart body. I found that I could prevent getting a sore back by (careful adjustment of seat, including lumbar support and) lifting my butt and doing some "body wiggle" every 20 minutes or so.

If you're on rough roads, then the suspension stiffness and Cup2 tires can yield a rather harsh ride, but on reasonably good highway surfaces (especially twisty ones), there's no issue unless you like a marshmallow ride.

The other thing I find bothersome is the road noise from the Cup2 tires (I've only ever used Cup2s but would bet that PS4S tires are much quieter and smoother riding). When you consider that you have 12" of (track-tire) rubber hitting the road a few feet from your outside-facing ear, it's sort of "to be expected." For longer trips, I now insert one AirPod Pro in my outside-facing ear and set it to the middle "passthru with noise cancelling" setting. Previously I just used a foam hearing-protection insert, but the AirPod is much better in multiple respects.

With its few issues (as is the case with any vehicle), the GTR still brings more smiles per mile than anything else I've driven. I hope (and expect) you'll experience something similar.

Even with my C63 on PS4S, tire noise is dominant, especially on concrete highway sections. Luckily, most of our highways are paved with rubberized asphalt, which dramatically reduces road noise. I'm on the BMW Star marked PS4S, which is very similar to the Cup 2. It uses some of the same compounds in the same 4 compound arrangement as opposed to the standard aftermarket 2 compound PS4S I had before. But even the standard PS4S is not a quiet tire.

As for the seats, I also have the Performance Seats and I've done up to 12 hours of seat time in a single day in them. I actually find them awesome, but it does depend on driver fitness. I'm in my early 50s and athletic and 5'11" is about the ideal height for these seats. However, from what I remember, the Performance Seats in the GT lack the thigh extension, which is a major part of what makes the seats so comfortable for me. I find most seat cushions to be too short for my height, so I always fully extend the thigh extension. Furthermore, my seats are heated and ventilated. Especially the latter one makes a huge difference on long drives in the summer, or when I'm working up a sweat in the canyons. These are some of the things that make the GTs less of a long distance/daily car. The other part is the lack of full driver assistance systems. While the GT has DISTRONIC, it doesn't have Active Steering, which I love on long trips and when I'm occasionally finding myself in stop&go traffic.

Oh the other thing I personally had an issue with the seats in the GT is that I pretty much have to move the seat all the way back, otherwise I have to bend my legs uncomfortably. This in turn then limits the backrest adjustability due to the two seater layout and not enough room behind the seat to recline it to a more relaxed position for longer journeys. Also on the track, I couldn’t recline it enough as for the headrest not to push on the helmet the entire time and making my neck uncomfortable. In a 2+2, I can pretty much always find a comfortable seating position, but 2-seaters often create an issue for me.

I'm 6'0.3" and 181 pounds, so we're not that far off. I think your thoughts on the driving position apply to me too; I'll find out soon...
As for driver-assistance systems, I think what I’ll miss most are the Matrix LED headlights from my TT-RS. As for active steering (which is also available on the TT-RS), it’s definitely better to have it and not use it than to not have it at all—though given the typical layout of European roads, I used it quite rarely and only ever on the highway.

AMG GTC Roadster, E63s Ed.1, M8 Comp. Coupe
I think seats and comfort are highly personal preferences, storage for luggage is not. I think the coupe can hold enough luggage for two and a short trip but of course not anywhere as much as a 4 seat C-coupe. The GT roadster trunk is barely usable for shopping
In terms of seat comfort, all AMG performance seats are the same no matter the car (they are made by Recaro anyway). I prefer them over the standard AMG seats even they don't have the thigh extension. Just like the firm fit. I am 6'3" and GT's work although it's a bit tight with the helmet.
I definitely liked the ride comfort much better than our old W213 E63s.

Since you are in Europe, the bucket seats were an option not available in the US. Which seats do you actually have?

no bucket seats on my GTR, I went specifically for the performance ones because considering how I use the car (95% road-5% track) I would have appreciated only their cons and not their pros, I guess...
