Another thing I haven't been able to do yet, despite several attempts, is access the secret menu where you can view the temperature and oil level (someone here on the forum posted the exact procedure, complete with photos)... Either I'm doing the sequence wrong, or maybe the feature is disabled on European versions (though that wouldn't make much sense)

Do you mean the workshop menu? I did the attached write up a while back for my Indy to retract the rear pistons. This should work on the FL GT as well. They didn't know about it. You have to make sure the ignition is in the correct position and that you are on the correct screen for the trip computer. Also make sure you press the correct buttons on the steering wheel. They are different between cars with DISTRONIC and w/o DISTRONIC. I don't think you can see the oil level, though in the GT. Like my C63, the GT still has a physical dipstick instead of an electronic oil level sensor, and the temperatures you can see w/o the workshop menu. I've got them up most of the time as shown in the picture below. All the temperatures together with the tire pressure are shown in this one view.

I can confirm that mine has Distronic, and—as I suspect is the case with all C190/R190 models—it also has the dipstick for checking the oil level, and of course the engine oil temperature is displayed on the instrument panel. I wonder if, by following your code combination, I can bring up the workshop menu on mine too...
