Subwoofer Install 2013 E-350 Cabrio
I heard I would run into problems trying to run my sub into the stock amp. I have a CX360.4 4-Channel Amp from kicker and I’m wondering if it would be easier or even possible to switch the amps and just wire the sub right up to my kicker amp. Or would it just be easier to wire around the stock amplifier to get the speaker signal

Personally I would not disturb your side channels until they eventually require attention. They will given enough power + heat.
Grab an adapter to go from optical MOST fiber to drive your sub-Amp (RCA analog input): done?
Keep an open plan to complete additional channels later.
