Hypothetically speaking... paint
Body and paint work scares me. For me, either I'd save up the money for professional work or do nothing at all... I know you said you don't want to be talked out of it, but you're talking about biting off a huge and high-risk project!
Get some books and some videos. I think videos would be even better because a lot of good paint work has to do with the "art" of it- the "brush" strokes, the prep work, etc. Reading about it won't be as powerfull as seeing it in action.

I think you misread my original post though, I didn't say I don't want to be talked out of it, I said I wanted to be talked into doing it. When I created the thread I didn't think I would do it, I'm still not sure.
Most likely situation is that I'll prep the car myself, and then have someone else paint it.
Well, It could be a pretty cool project or a really horrible primer looking paint job. What is the condition of your current paint job? If it's like the picture in your sig I wouldn't touch it.
A flat black paint is the same as a two stage paint job but without the clear. You will have to prepare the car as if it was a 2 stage paint job and since it's flat it will be harder to hide any imperfections.
You can use a single stage satin black like this one..

The car does not have to be driven in poor weather, and I wash my car constantly so fingerprints etc are not a big deal, since the daily layer of dust is enough to drive me crazy and touch up the car pretty much each day anyway.
