I had the top removed and all the rams sent out for repair. Sinc the car was in a local shop I had them inspect the wiring harness (Good to go) and re wire the radio harness to stock. I added a correct Becker radio and then started searching for interior parts. Floormats, a few knobs and trim parts, the rear trunk handle, and am still looking for the fabric retaining bow, which is prone to shrink and crack from age.
Then I went out and got some monoblocks, sourced a full sportline suspension with all bushings, LCAs, swaybars, shocks and springs. Even the sportline badges for the fenders. While that was being done I replaced the prop shaft bushings and flex discs, which you should inspect.
The Becker blew up on me and I bent and then broke off my cheapo antenna so a new one is on the way. I had an aftermarket alarm system that I took out and now am ready to upgrade the head unit for more reliable sound. I also replaced the alternator.
That's about as far as I will go on this car for awhile. I am continually trying to get the swirls out of the paint which is pretty major unless I keep it waxed after every wash. Its a great car and you will enjoy it endlessly.
I also bought my car with chromed wheels. I think a lot of them were dealer optioned. One other unique option on my cab is the orthopedic seats. I don't see any reason to try to get them to be brought back to working order, as the bladders disintegrated long ago, but someday that may be something to address.
I drive the car in all weather (Sorry Ray!) but baby it as much as I can. I bought it with 73K miles and I just rolled into 82 K this week.

What a story! It seems that your car has encountered many "issues", that could alter, for many of us, the pleasure to own one. But you seem very optimistic.
Amazingly enough, I did buy my car on internet without any physical inspection and apart the harness wiring, all the rest was in great working condition (I have bee rather lucky so far on this purchase I must admit). I just replaced:
- the antenna
, - battery, tires, break pads, discs and hoses (in prevention just for security and French registration inspection),
- fluids,
- exhaust pipe line as it had three little rust holes in the mufflers and it was the original exhaust line never changed (all mufflers were in one factory piece and not two as for replacement!).
Your car description leaves me to think that probably it has suffered a long and hot exposition to the sun, like in an oven. Exactly like you, I am looking for interior parts, but even in Germany, MB does not produce them anymore in beige/tan. Only some in black are still available. I am constantly looking on Ebay.com (USA) to find spare parts. But, belonging to a rather active , French W124 club, I can assure you that only OEM or genuine parts are worthwhile on the long term. All the members who have tried other brands have encountered premature obsolescence.
I don't think that MB produces anymore the black "gum pillows" (hard to find an English word to describe it) for the orthopedic seats. However you can find them from time time on ebay or other sites. But they become very rare, so I would encourage you to find some ASAP. Again, they have to match your orthopedic version as it seems that they have changed over time. Anyway, I wish I had this option as well... Who knows, if I find used seats I might purchase them... because it is rather difficult to adapt the system to non orthopedic seats.

For the paint, if the body and the paint are in great condition, you may try a full painting surface restoration with teflon products. Although it is not cheap (must be done by certified professionals otherwise it is a waste of money!!!) this works wonderfully on black paintings. And you will have an almost brand new painting. In France it is around 1000€ or $1300. Indecent I know. But it is the third of the price of a brand new professional painting.
My goal now is to restore the chassis to a new condition: painting and protection, triangles, springs, shock absorbers, all the "gummy parts", joints, gas pump and filters, any damaged parts... but it has a non negligible cost, so I believe it will take me some time to do it.
In the meantime, like yourself I enjoy the car as much as I can throughout the year, our winters being..."mild" over here.
