You can find a DIY on benzworld.org in the W210 section. You should ideally drain, remove the pan, and replace the filter. You'll need 5 quarts of trans fluid. Make sure to use MB brand or the Fuchs which is compatible. Parts.com or autohausaz.com for the fluid and parts is much cheaper than the dealer.
Differential you can use Mobil 1 gear oil. It comes in a different shaped bottle from normal engine oil. Two bottles are needed. Get a pump from Walmart or an auto parts store to get it in the diff.
Power steering you need the MB fluid or Pentosin. Check autohausaz.com. One can should be enough to drain most of the system.
