Went to check my oil / add more... Car had a recent oil change but the dipstick showed low so I opened to add more and noticed this gunky look to it all. Any ideas what it could be? Looks like water got in the oil or something... in which case most likely head gasket issue? Car still runs w/ no new noises or anything, oil temperature looks good. Any advice would be much appreciated.
That's water and oil whipped together. Probably got in through head gasket. Park it and don't drive it anymore. Regardless of how it got in the crankcase, You've got to fix the problem immediately. Hang on, this isn't going to be cheap.

It's not necessary to be so rude khomer2. I grew up around cars and that gunk sure looks like a blown head gasket to me. If that was my MB I would err on the side of caution.

You need an attitude transplant. Attacking people isn't helping people.
I feel there is merit that you CAN wave it off as nothing....or an indication of something more serious. If it were so easy
to diagnose an sympton based on a snapshot, many auto repair services would be out of business. To the OP, I would
suggest driving for longer distance at highway speeds for an hour or so to see if the mayonaise disappears. If it continues
to manifest even during well heated engine temperature, then perhaps having a simple leakdown test done on the radiator
