No, getting 19 or 20 inch rims will not change the height of your car at all as long as you buy tires that will maintain the same overall diameter as the original rims and tires. By going with a larger rim, you end with a shorter/smaller tire sidewall, which will affect ride comfort.
For example, if you have stock 16" rims with 225/55R16 tires and you wanted to go with 19" rims, then you'd buy 245/35R19 tires in order to keep the overall diameter the same (which also keeps your speedometer and odometer accurate). Whereas with the 16" rims you had a 4.9" tire sidewall (16 + 2*4.9 = 25.8 overall diameter), with the 19" rims you're down to a 3.4" tire sidewall (19 + 2* 3.4 = 25.8 overall diameter).
