I do all my oil changes and it costs me about $68 dollars for MB Sheet 229.5 oil (0W30 Elf Excellium Full Tech -- $ 7 plus shipping of .50 a quart) and a Mann OEM equivalent filter ($8).
If I can buy this stuff off the internet at these prices think what a dealer or independent is paying for bulk oil and filters. My guess is a 55 gal drum of Mobil 1 0W40 cost a dealer maybe 3 dollars a quart from a Mobil distributor and the oil filters are probably maybe 4-5 dollars.
They can make a profit -- there labor costs vary based on location but I doubt they are paying much more that $10-15 per oil change. So if their cost is $45 the $89.95 is still a profit and it gets the car into their shop where they can look for other issues they can sell you. So increases their opportunity for further work.
